How To Cook Buttery, Marshmallow Popcorn That Tastes Like Crack



With Christmas just around the corner, I am happy to share with you another one of my "How To Cook" posts. I know, I KNOW, some of you hate cooking or you just do not find yourself to be a good cook.

But, BUT, I promise you. Cooking can be easy, simple and fun.

I am not here to complicate your life with some bullshit recipes that no one but the chefs at Southern Living Magazine can dream up, or you know, photoshop to death.


My recipes are always geared to the "cooking challenged." This means these recipes are pretty much idiot proof and will prevent this from happening:

I am here to help you. Ain't nobody got time for a burnt kitchen.

Thus, let me ask you a question. Does anyone in your family like butter, marshmallows, caramel or candy? Well, honey buns, this recipe is for you. And it seriously is addictive, like crack (or so I am told). Once you eat one bite, you will want more and more AND more. It probably is not good for you and it definitely will not help those of you watching your waistline this holiday season.

It is for those of you girls like me on the seafood diet:

We see food. And we eat it. #yum

Buttery, Marshmallow Popcorn That Tastes Like Crack

You will need the following grocery items:

1 bag of popped popcorn
1 stick of butter
1 cup of light brown sugar
1 tablespoon light corn syrup
20 large marshmallows

Let's get started. As usual, I have supplied plenty of photographs so just roll that beautiful iPad or tablet footage into the kitchen to compare your version to mine.

First, you will need to grease a baking sheet. 


I just sprayed some aluminum foil with Pam for this process (I know, I KNOW, this is so shitty for your body, but hey, we gotta make that booty grow), but you can also grease the pan with butter.

Then, you will need to pop your bag of popcorn and pour it into a large bowl.


You can use any type of popcorn you like, but I prefer to use the Pop Secret Movie Theater Butter for extra buttery goodness. 

Hey, go big or go home, right? 


Just make sure you remove ALL the unpopped kernels from the popcorn. Am I the only person who calls the unpopped kernels "Old Maids"? #mymommataughtmethat

While you are popping your corn/removing those pesky kernels, melt 1 stick of butter in a large saucepan on the stove at a low temperature.


Once the butter has melted, add in your 1 cup of light brown sugar and 1 tablespoon of light corn syrup. Stir this all around to make certain it is well blended.

Now, it is time for my favorite part - the marshmallows. I like to use the jumbo marshmallows (I found mine at Kroger and have seen them at Target). These are the kind you need to make S'mores with, as well. If you are like me and use jumbo size, you probably only need about 10 marshmallows.


But, BUT, if you cannot find jumbo, you can just use the large size marshmallows instead. When using large, you will need about 20 marshmallows.

Add the marshmallows into your saucepan and stir continuously on a low heat until they are all melted. 


If you want to speed this process up, you can turn your heat up to about a 2 on an electric stove/little higher than low flame on a gas stove. Just do NOT go too high or this will all burn.

We want crack, not crap.

Once everything is melted into a sticky, gooey mess, you pour the concoction in the saucepan over the popcorn in the large bowl. Mix the popcorn and sticky goo really well, and then spread it out into your prepared pan. 

It should look like this:

You can either spread it out further and cut it into bars, or you can roll it up into balls. I prefer to roll it into balls. I will grease my hands, grab the popcorn and roll it up to can it for holidays gifts and for eating.

When it is all said and done, the Buttery, Marshmallow Popcorn should look like this:


You can store this in an airtight container or you can bag it in Ziplocks. This does NOT have to be refrigerated and it lasts for several weeks.

  5. Yes, I am making this. I totally am cooking/baking challenged and I appreciate that it is idiot proof :) I love marshmallow treats and caramel and butter and sugar so, yeah, this sounds perfect. I'll let you know how it is. I will eat while finishing Jessica Jones!!
